Juan Heredia Sanchez was the winner of the first ever Cup of Excellence in Peru. He owns two farms, each around 3 hectares. He grows Caturra, Bourbon and his Geisha trees are to produce fruit for the first time next year. Once the fruit is picked it is delivered to his house and fermented in bags overnight before being pulped and fermented in concrete tanks. Once fermentation is complete, usually after 40 hours, Juan washes the coffee and places it on raised beds inside a wooden drying area, which is an extension built onto his house. The coffee dries for about 2 weeks and is then transported to Jaen, where our green bean suppliers pick it up.
The quality of coffees from Peru varies. Some lots are outstanding, some not so much. There is a lot of work to be done in educating farmers on harvesting and processing techniques. The Huabal region, where Juan's farm is located, spans a couple of mountains and the climate condition and soils vary considerably, with some areas having wet, humid conditions and African like red soils while others are dry and hot. This all contributes to diverse and delicious cup profiles and some very complex coffees.
Juan Herida's lot is a lovely medium roast. Great black but can take milk too.
