The average size of coffee farm in Sumatra is small, just 1 to 5 Hectares and different varietals are grown together. The cooperative that produces this coffee has 486 members. The farmers of the cooperative receive training on tree management, pruning and picking the ripe cherries to achieve the best possible quality.
Processing: In Sumatra the coffee is traditionally processed with so called Giling Balash method (semi washed really). The coffee undergoes 12 hour fermentation process before then being dried for 2 - 3 days depending on weather. Once coffee has reached 35% - 40% moisture content, it is then send for hulling and allowed to dry to 12% .
Most of the farmers are growing coffee alongside other important crops such as rice. This is very poor region and improving quality of coffee produce is one way to bring extra funds to the region.
CUP PROFILE: grapefruit acidity, dark chocolate , big buttery body, sweet and perfectly balanced. Long finish. Bonkers.
