Pacoc village lies high on one side of the volcano that towers above lake Atitlan. The farms are small and all throughout January one to two bags of ripe cherries are picked up from each farm. These cherries are processed with the help of an organization known as Los Volcanes. With this help the farmers are able to be part of the post-harvest processes such as cupping and roasting. The history of the area is one of civil war and trust in ones neighbours is often one of the first casualties in such conflicts. However, since its end in 1996 the farmers have come together in order to create a wonderful product which we are honoured to provide to our customers here in the U.K. All that hard work is symbolised by the colourful artwork on the bag which has a much deeper significance than we might at first guess.
Cupping notes: Tropical. Papaya, guava, red currant. Dark chocolate, juicy, smooth, well balanced.
